POK POK VINEGAR Most people initially cringe at the idea of quaffing anything with the word "vinegar" in the name. However, drinking vinegars date back as far as ancient Rome, when sour wine or vinegar was mixed with honey for soldiers in the Roman army. New to Charelli’s is the line of drinking vinegars from the famous Pok Pok restaurant in Portland, Oregon. The tonic-like vinegars are made in house from macerated fruits in the same way shrub is made, using cane sugar and coconut vinegar to concentrate the fruit flavours. The drinking vinegars come in four four flavours apple, honey, tamarind, and pomegranate. The apple possesses the strongest vinegar presence of the four, but the acidity is cut somewhat by a satisfying apple-tinged sweetness. The honey also carries a certain level of that vinegar bite, but again, the sugar aspect makes for a smooth and easy-drinking beverage. The tamarind and pomegranate flavors are much sweeter, with little to no sour punch, making them the ideal choice for the first-timer or picky palate. They couldn't be simpler to use. For an ideal drink Pok Pok recommends diluting the concentrated vinegars with four parts soda water to one part concentrate. Or you can try your hand at this recipe: Pok Pok Apple-Gin Rickey |

CAMELINA OIL ![]() Camelina is an ancient grain that originated from Northern Europe and Central parts of Asia. The introduction of modern food production and the introduction of alternative oils made Camelina dormant for several centuries. The reintroduction of the oil from Saskatchewan is a great addition to the culinary world. It is rich in flavour, vibrant in colour and is unique in that it provides the necessary daily intake of Omega-3 fatty acids that our body requires. It can be used for a variety of purposes from dips and spreads to marinades and dressings to cooking. Come to C-ONE on November 25th between 11am-4pm to try the oil. | ||

BARELY BUZZED CHEESE
The cheese is nutty, full flavoured but with a smooth texture. The cheese is hand rubbed with a blend of Turkisk coffee and lavender buds. They are ground together, and the mixture is diluted with oil to suspend the ingredients in the rub. The rub gives a caramel like taste towards the edge of the rind and makes it’s way towards the middle of the cheese. If you like cheddar like cheeses and are interested in steping out of the box, come and try this cheese.

KUSMI TEA
We have a new line of teas arriving in the coming weeks. Kusmi Tea has an old and interesting history. It started in 1867 when a fourteen-year-old boy named Pavel who came from a peasant family was looking for work and snagged a job as a delivery boy for a tea merchant, after arriving in St. Petersburg, Russia. He then learned everything he knew from his employer including the art of blending. Pavel’s employer gifted him a small teahouse when he married. Pavel then expanded to 11 tea houses and became the largest tea supplier in Russia. Over the years, the production of the exclusive blends has not changed. The teas come in an incredible array of blends and are beautifully packaged. |

NEW AND RECOMMENDED
Here's a quick list of a few of our new and favorite products. Spinnakers Pale Ale Vinegar: Spinnakers brew pub in addition to their craft beers and restaurant creates malt vinegars at their on-premise brewery. They use traditional oak barrel aging methods and integrate modern technology to produce a natural malt vinegars. The vinegar offers a soft mouth feel, with a bittersweet aftertaste. They are awesome for salad dressings, and marinades. We also ensure that everything we carry is the best quality and is from a responsible source. That being said in the past few months we have received some “hate” mail for our choice to carry foie gras in our store. We understand that some may feel we are supporting animal cruelty. This is not the case. We’ve investigated the sources of our foie gras, and are content with the principles put forth with the companies that produce the foie gras. Their farming is humane. Unfortunately, misinformation about foie gras spreads faster than the truth. Most facts about foie gras are from vegetarian activists or extreme anti-meat activists, not from unbiased scientists or veterinarians |
