Ingredients 250g Cream Cheese1/3 Cup White Sugar2 Egg Yolks½ tsp Lemon Juice4 ApplesSugarCinnamon½ C Slivered AlmondsWhipping Cream Directions Line the bottom of a spring form with your favourite shortbread (unbaked, recipe below) Beat cream cheese with white sugar. Add 2 egg yolks one at a time, beating well after each addition. Add lemon juice. Pour mixture on shortbread. Peel, core and slice apples. Coat slices with sugar and cinnamon arrange on cheese mixture. Sprinkle with slivered almonds. Bake at 475 for 10 minutes. Then reduce to 375 and bake for 35 minutes. Remove from oven let cool for 5-10 minutes then remove from spring pan Serve with whipped cream. Shortbread Recipe 1 C Butter1 ½ C Flour½ C Cornstarch½ C Icing Sugar Combine all ingredients. Blend and beat until desired consistency is reached. Recipe can be doubled but increase baking time an additional ½ hour.
