2 tbsp Extra virgin olive oil
6-8 oz Pancetta or Bacon
1 Medium yellow onion, minced
¼ C Tomato paste
¼ C Vodka
2/3 C Heavy cream
Freshly grated Parmesan or Romano
Heat olive oil on medium heat. Add Pancetta or Bacon, stirring occasionally, until rendered but not browned. Add onion, cook until translucent. Add tomato paste; cook stirring frequently, until fragrant and dark red. Deglaze pot with vodka. Stir in cream until well mixed. If using for pasta reserve some pasta water to thin sauce to desired consistency.
Add to favourite pasta, top with grated cheese and basil. Enjoy!
