In 2018 in Verona, we had the opportunity to meet Luca and his aunts, Gabriella and Elisabetta, and in 2019, we had a lovely day at their farm. The sisters have been running the operation since 1995, and their father established it in 1955. The family’s groves are in the hills of Recanati, south of Ancona in Marche.
This family works together to create their high quality olive oils. We selected Solivo, a blend of Leccino, Frantoio, Mignola, Carboncella, Pendolino and others.
The family mills olives the classic way, with mill stones, and detailed pressing. They are able to achieve remarkable olive oils with these techniques.
These varieties, harvested at just the right points of ripeness and processed together, give Solivo a lightly fruited scent, a sweet taste, the slightest spicy touch and a bitter aftertaste.
